Stretching is part of it, but yoga is much more: it works on strength (holding your own weight in poses takes muscle), balance, mobility, breathing and mindfulness. It is a complete practice that involves body and mind at the same time. Reducing yoga to "stretching the body" misses exactly what it has most valuable.
